Garlic Scape Pesto Chicken

Garlic scape pesto:

1 cup lightly packed fresh basil leaves

2 oz pine nuts (fresh or roasted)

Garlic scapes (5-6 individual scapes)

Olive oil

Lemon juice

Salt

Parmesan cheese (fresh grated)

Blend basil, pine nuts, and chopped scapes in a food processor. Drizzle olive oil until blending smooth. Add lemon juice to taste. Grate liberal amounts of Parmesan and continue to blend. Add pinch of salt

Serve with pasta, fish, chicken. Photo is garlic scape pesto smothered chicken with blistered cherry tomatoes over orzo. May need to blend in spoonful or two of hot water for texture
